Here it is...Lemon & Lime Cheesecake

After 37 votes the cheesecake won...and I was secretly pleased. It was the simplest to make with only a few ingredients and it turned out beautifully.

The taste is fresh, sweet and very creamy. (and that was just from licking the bowl!!!)
The lemon & lime top set quite firm which I thought looked a bit plastic-y and would taste artificial (I don't really like sugar free stuff and am a cook from scratch type girl normally!) but it wasn't like that at all.

A great fresh lemon & lime zing, creamy once in the mouth and the base was just great. I used mascarpone cheese and philly cheese as I am not to keen on the texture of ricotta.

I used pecan nuts in place of the hazelnuts and I think it gave a softer taste and texture.

I decorated it with lemon & lime zest and serve it as one of 6 dessert choices after lunch today. Three of our guests chose the cheesecake and we kept quiet about it being diet food...lets face it, no one would have believed us anyway!!
This is served best at room temperature....straight from the fridge doesn't allow the true flavours of the base to come through.
I'm thinking, next time I could try raspberry or strawberry sugar free jelly with fresh berries to decorate!

Hi Tulip - I have just seen your Ticker weight loss thingy and realised that we both started at the same place (give or take a pound) at about the same time (Jan starter?) and are aiming for the same place. 10st was my wedding weight and I've made it back there, but I REALLY want to get to the illusive 9 1/2 stone, which is what I was when I met the gorgeous OH. For as long as I can remember it has been so near, yet so far and this time I really think I can make it. I will keep an eye on your Ticker as an added incentive!
