Avocado with a warm dressing

I had this for breakfast yesterday and on hind sight I think it would make a better lunch dish. I used mature stilton as my blue cheese and it was a little hard core for a 7am!!! Great flavours and I love pine nuts. The photo suggests that they were a little well done, but they weren't at all. It all went together perfectly....except the smelly stilton so early in the morning! lol Next time I must remember to by a milder blue cheese!
