Homemade Coleslaw

My coleslaw goes down a treat with the staff at work....this one is a little different as it contains fennel instead of the usual red pepper or carrot. Great after taste to this one, the homemade mayo makes all the difference too!
To make just shred a small cabbage in your food processor [by hand is fine, it just takes longer and isn't as fine] then grate or shred a small fennel bulb then mix with mayo until you have a coleslaw consistency. Great with everything.

You can't beat homemade coleslaw Tulip. I love the addition of fennel and will give that a try next time. I have some in my crisper drawer right now!

I would never have thought of using fennel in coleslaw- am going out right now to see if there is some in Sainsbury's.
