Lamb Patties

They are in the book and they are amazing! I don't like aubergines...I may have mentioned it once or twice, these have them in but you can't taste it, it makes the patties really moist and the lamb (which can dry out in meatballs) stays moist and juicy! The aubergines are microwaved for speed and the patties can be cooked quickly making it an idea supper dish too. I served mine with minty mayo as Bee suggests and if I'd have had any left (kids dug in and the plate was cleared) I would have served them with a large Greek salad for a main meal. I will be making a double batch next time and keeping quiet to the kids...that way I will get to put half in the freezer for my mate Ron....later on!

Those look mighty tasty Tulip. I hardly ever buy ground lamb. I may get some and give these a try.

That's a great idea to add some aubergine to keep them moist. I love kofta!
