Cranachan

I will be making this again, only this time I will take note of the instruction "whip the cream, but not too stiffly, only to the soft and floppy stage"
There's a reason why it says that...I think I over whipped my cream! While it was ok when doing the final mixing, after a very short time the oats had soaked up any moisture left in the cream & raspberries. The one I left in the fridge for Paul was inedible by the time he was ready for it.

I added about 3 level teaspoons of splenda and it was just the right amount for me. I loved the flavour of this, the whiskey with the toasted oats was something I'd never had before and the berries complimented them both perfectly.

A great phase 2 dessert!

I have never had cranachan Tulip, but may have to splurge and have some soon. When you fold things into whipped cream it makes it stiffen up even more. It's better to err on the other side I have learned! It still looks good though!

The other way to do it is to layer things, not fold them in, I've discovered.

Still tastes fab even when you have to knock lumps off with a mallet...
