Feta, Olive and Butternut Salad

The cookbook says that the salads in the book have balls, they are man salads and they won't leave you mooching around the kitchen wondering what else you can eat....They are not telling pork pies this was very filling, tasty great texture and very colourful.



Just a point of interest, I roasted a whole butternut squash, sprinkled just what I needed for the salad with cajun spice and saved the rest for another meal. I made up a cajun spice mix, you can find the recipe here

This salad does look pretty good I must say!
When I have a squash it usually lasts for a couple of meals - good value really!
