This is a Jamie Oliver creation...not sure which book, can look it up if anyone wants to know. I like to cut the bacon (and sausage when I used it) into bite size pieces, that way I can eat breakfast while reading my book (totally piggish I know!)
Easy to do, just fry the things that take the longest to cook first, adding other ingredients, make a space for the egg, add a little ground nut oil, give it a couple of seconds to heat up, then crack your egg into it. NB - to cook the top of the egg I do one of two things. 1) stick it under a preheated grill or 2) my favourite, spoon the oil and fat from the bacon over the top of the egg until cooked.
