My eldest daughters boyfriend is a game keeper and was out on a shoot on Monday. I was given a present yesterday of 4 pheasant breasts. After a search on my favourite web site I found this recipe for
Stuffed Breast of Pheasant Encroute. I followed the recipe except for the bit where you have to wrap it in the pastry.
