Don't you just love fresh prawns?

Garlic prawn stir fry

This was such a tasty dish! If you click on the link above it will take you to the recipe. In it you will see it calls for cashew nuts, you will no doubt come back here to the photo to see if you can see them....you won't!!! After nomming [slang word for scoffing...lol] the dish I went back into the kitchen to find them sitting in a little bowl waiting to be added to the wok! Woops...I forgot them...they would have added an extra crunch to the dish but it was very nice without so I didn't miss them too much.

Hot chilli prawns with melting cheese & pak choy

This recipe came from 'peckish' in the Pig2Twig forum - this is what she says about it...

An IPD-friendly dish from Delia. We just tried it tonight. Yummy but pretty rich - give yourself lots of green leafies or salad to balance it. Quick and easy to do. We'll definitely have it again.

I thought I'd give it a try too and taking her advice served it with lots of crispy green pak choy and I totally agree with her...I will definitely have it again, quick easy and very very tasty!

Thanks 'Peckish' I hope you don't mind me posting the recipe here?

Prawns & Soba Noodles

Onions, red peppers, sauteed in Nana's lime seasoning then prawns and coconut milk was added to make a creamy sauce, I served this with cooked soba noodles stirred through. The photo isn't very good but it tasted just fine, I loved the texture of the noodles and they went really well with the creamy coconut sauce. Paul loves prawns so this was a hit with him too!

Pasta with a Tomato & King Prawn Sauce

A simple sauce of onions, tomatoes, garlic with a tin of tuna heated through and a few king prawns thrown in at the last minutes. [Not IPD friendly] A simple tasty supper.

Weemam inspired...

In the Pink cookbook there is a recipe which is among my favourites, its salmon, broccoli & feta bake (think that is the right title) its just the best. However Weemam from the forum does it with lots of different fillings....mushroom and bacon etc....so it got me thinking and here is my version...Tuna and french beans.
Followed the recipe exactly just subbing the salmon for tinned tuna and broccoli for the beans...thought it would work due to salad nicoise being one of my favourites. I wasn't disappointed....Paul thought there was a little too many french beans (so, not so heavy handed next time) but in theory it worked...more of a poor man's bake what with tuna being a lot cheaper than salmon. Still prefer Bee's salmon one tho -

Inspired by Bee...

Again, not the best photos...what is the problem with my camera??

Prawn & Spinach Curry

Curry in a hurry but I had more time! I followed the ingredients list in the book but cooked it in a wok and added 'riced' cauliflower! Flavours were wonderful and added 'rice' made it filling enough for an evening meal. Sorry I didn't follow your recipe exact Bee, but you inspire me all the time!

Prawn Curry with Garlic & Corinader 'Rice'

Brown is the new black and cauliflower is the new rice!!!! Its official, you don't need rice when you have grated cauliflower...Oh WOW!!!

I've just stir fried some graed cauli in garlic butter until just tender, then sprinkled it with chopped fresh coriander, mixed it in and served it with Prawn Curry (pge 101)

I have followed a low carb diet for near on 5 years now (give or take the odd month falling off the wagon, running behind it and scrabbling to catch it up) and I must say this is one of the nicest, friendliest diet recipe books I've had the pleasure to eat from, I don't want to fall off this one, its too darn tasty to do anything else but stay put!
The prawn curry is from the PB cookbook and is under the heading 'Take 5' which was designed by Bee for when you 're in a hurry...I had a bit more time on my hands so I roasted my spices...
...and ground them to make my curry powder...

...then served it with the garlic and coriander cauliflower rice, which needed me to chopped the coriander first.
The end result was well and truly worth it!!

What I did with the left over mussels

Cook them as you would for moules et frites then toss into hot pasta...so simple but so delicious. I served it with Italian Peasant Bread for bread machine from the recipezaar site. Again a simple thing to cook with outstanding results.

But thats me done with eating all these forbidden foods. I am not supposed to eat wheat, it really plays me up BUT it's the holiday so I have, in moderation...except the past few days when I have overdosed on it!!! I feel so Blahhhhh!!

Watch this space....healthy stuff to follow!

I'm back off holiday

This was the dish I had on holiday, Cornish Moules et Frites, looked great but were a little disappointing. I also paid nearly £8 for them!!!!

I arrived home late Saturday night and went to the supermarket on sunday morning only to find Mussels on sale. I bought 2 kgs for £3.90!!!!
I cooked them with chopped shallots, garlic, butter, dry white wine & black pepper. I served them with good old chips. Delicious!!! I have enough left to make a seafood pasta for tomorrow! NO PASTA IF YOUR A WANNABE TWIG!
