Dottoressa's Chocolate Muffins

Stiffly whipped egg whites - make sure your bowl is super clean otherwise they will stay flat!

Step 2 - Mix the almonds, egg yolks, cocoa, sweetener* and optional
vanilla and cinnamon together in a bowl

A rather larger individual chocolate cake dessert!!!
The recipe belongs to Amanda from her Cake & Biscuit Diet website while this one was the chocolate muffin recipe, I prefer the Moist chocolate Muffins as the texture is more cake like, moist AND chocolate-y....what more do you need from a IPD friendly dessert??
Great for Diabetics and wheat free people too!!!!
* I used 'sweetness &; Light' sugar alternative and it was great, no aftertaste at all!

Sweetner Update

The Poll is closed and the findings were interesting to say the least. Splenda won.... :-( This is my least favourite of all of them!!! Don't like the aftertaste at all!

These are my findings, just personal preferences, and where taste is concerned there is no right or wrong. But for my easy of use, taste or more importantly, aftertaste and the biggest test of all is if I can convince my Mother-in-law & Father-in-law (MiL & FiL) that its sugar!!!!

I have made a cake with Hermasetas and it was great, no aftertaste at all, the cake didn't rise as much as with one made of sugar but for diabetic in-laws this hit the spot. Neither of them could tell the difference!!



The canderel looks and smells more like the real thing, we are using that in the sugar bowl at the moment, the texture is the closest to the original so very good at convincing the oldies, BUT it is the most expensive.
I made a rice pudding with it yesterday and again no aftertaste and passed the sweet tooth test of F-I-L!!!



Tesco is the cheapest, and a good sugar substitute, it has little or no aftertaste and as it comes in a plastic jar feels like you're buy nothing but air...its so light! Haven't baked with this one yet but when I do I will come back and update you!
I still have sweetness & Light to cook with yet, I have used it in hot drinks and did the wet finger taste test and that was good, my girls like this one as its in a pink jar...but we can't judge it on that now can we???

The Sweetener Taste Test


This is it, once and for all, I'm going to get to the bottom of this sweetener lark. My daughters are now at the tea drinking stage...with two sugars!!!! I have never allowed them to drink tea or coffee while growing up but teenagers have a mind of their own!!! I am encouraging them to use a sweetener over sugar...not sure I like the idea of filling them with chemicals BUT I can't control everything!!!! (believe me, I've tried...give you such a headache!!!)

As a low-carber I am face with recipes using sweeteners all the time, but hate them, avoid them like the plague, the after taste is YAK!!! But after making the moist muffins from one of Amanda's recipe sites, I really want to get to the bottom of this, so...I have bought all three sweeteners and intend to try more from her site using them all! Results will follow in a while!

I have another reason for doing this; apart from the teenagers sweet tea, and my aversion to sugar in my attempt to stay low carb. My in-laws have just been diagnosed with border line diabetes and BOTH have an amazingly sweet tooth. If I can make cakes and biscuits with a sweetener and they don't know its not sugar I'm on to a winner!!!! Watch this space!!!
