A mix of two of Bee's recipes

While looking through the cookbook, I didn't know what I fancied, I liked the sound of the ham, leek & blue cheese pie but didn't have the ingredients for the topping, I also sort of fancied the mascarpone hash, but didn't have the any cheese. So I fried thinly sliced leeks in butter with a splash of oil, added some sliced mushrooms and fried till soft, next, in went some diced ham until warmed through, I then stirred in 2 heaped tablespoons of creme fraise. Finally I added diced brie and let it melt into the sauce....this is how it turned out....




Delicious!!!
