Spicy Tiger Prawns and Coconut Cream Muffins

Used cooked prawns as that was all I had, next time I will use uncooked prawns like Bee suggests as mine were rather rubbery (overcooked)




Give them a stir before putting in the oven otherwise your prawns will stay at the bottom, like mine did!!


WOW - they really did rise!



They smell truly amazing!




Made only half a batch...which was silly as they didn't last long enough!



They had a cake like texture which I think was down to the coconut cream...Deliciuos, and not eggy in the slightest!


Served these for breakfast but also had them in a lunchbox with a baby herb salad and vinaigrette dressing

  2. Carbs are addictive Sylvie...but not good for you, so go for it, cut down, you'll feel much better for it.
