Meatball Stroganoff

I wanted to do this for ages, but didn't have all the ingredients...still didn't have them all but really wanted this tonight so, the queen of subs did it again....no button mushrooms, so used bigger ones and chopped them up, used mascarpone as I didn't have ricotta (and to be honest I don't like the texture), no parsley....but didn't miss it too much.




So what did it taste like? ABSOLUTELY WONDERFUL, great depth of flavour due to the browning of the onions, meatballs and mushrooms. Takes a while but definitely worth it!

  3. I use ricotta to lighten the mixture - you don't notice the texture at all. But use whatever you feel happiest with :) This is one of my family's all time favourite meals.

  5. Looks really great - definitely on the menu this week. Just can't keep up with you Tulip!
    I made blue cheesy leeks for lunch just now - so simple and really yummish. Aubergine bake and celeriac dauph. yesterday. My guests wanted to know how! Combining the book with these pics is such a great help Tulip.

  6. I made this too last week and loved it. Mine looked as good as yours and we had with fine beans as well! Only changes I made was to have larger chestnut mushrooms sliced as I think theya re great in strognoffs and also we used pork mince instead as my hubbie fancied that - it worked really well. I had left overs for lunch next day - no real hardship!

  8. I love chestnut mushrooms too, they have a much better flavour than the ordinary ones!

  9. The whole button mushroom thing came about because when I invented this recipe we were very strapped for cash (plus ca change...). By making the meatballs the same size as the mushrooms it looked like the dish contained a lot more meatballs than it did! (didn't fool the kids though... ewww mushrooms.... spit...)

  11. I've never heard of Meatballs Stroganoff, but on a blob of buttery mash potatoes, I could fall in love with this.
