Too simple to warrant a full written recipe, but the flavours and colours need a mention!
Use really ripe tomatoes, remove their core and squeeze out the seeds. Cut them up so they are chunky, tear basil up and add to bowl season with salt and pepper then toss with olive oil and rosa balsamic vinegar. Leave to marinate before serving.
Now that looks super! We love tomatoes, although it will be around a month before we have nice, ripe ones!

ReplyDeleteI always leave my tomatoes on the counter instead of in the fridge. They get nice and ripe and lovely then. (a little tip from my mother) Your salad sounds delicious!
